Gluten Free Desserts

ROLLED SUGAR COOKIES

2/3 C SUGAR
1 C MARGARINE
1 EGG
1tspVANILLA
2 ½ C RICE FLOUR BLEND
½ tsp XANTHAN GUM
½ tsp SALT

OVEN 350* , BEAT SUGAR AND MARGARINE. ADD EGG AND VANILLA AND BEAT WELL. IN A SEPARATE BOWL COMBINE RICE FLOUJR BLEND, XANTHAN , AND SALT. ADD TO SUGAR MIXTURE. BEAT WELL ON LOW SPEED. COVER AND CHILL AT LEASTE ONE HOUR.
ROLL OUT ON A FLOURED SURFACE, BAKE 10 MIN. COOL AND FROST

RICE FLOUR BLEND

6 C rice flour
2 C potato starch
1 C tapioca flour

CHEWY CARMEL CORN

1 ¼ C KARO SYRUP
3 C BROWN SUGAR
1 CAN EAAGLE BRAND MILK
½ C MARGARINE

MIX ALL INGRED. IN SAUCEPAN STIR CONSTANTLY UNTIL SOFT BALL STAGE OR 225* POUR ON POPPED CORN AND STIR TO COBER ALL THE CORN, 8 QUARTS




GF CHOCOLATE CHIP BROWNIES

2/3 C BUTTER
1 ½ C SUGAR
4 TLBS WATER
2 C SEMI SWEET CHOC CHIPS
4 EGGS
2/3 C BROWN RICE FLOUR
2/3 CRICE POLESH OR RICE BRAN
4 TLBS CORNSTARCH
2 TSP BAKING POWDER
½ TSP SALT
3 TSP VANILLA
1 C CHOPPED WALNUTS

COMBINE BUTTER, SUGAR AND WATER IN SAUCEPAN, BRING TO BOIL, STIR UNTIL BUTTER MELTS.

STIR IN CHOC CHIPS, SET MIXTURE ASIDE. BEAT THE EGGS. ADD THE RICE FLOUR ,RICE BRAN CORNSTARCH, BAKING POWDER, SALT AND VANILLA TO THE EGGS.

ADD THE CHOC MIXTURE TO THE EGG/FLOUR MIXTURE. BEAT WELL. ADD THE WALNUTS POUR INTO GREASED 9X13 PAN. BAKE 325* 30 MIN

Gluten Free Recipes - GF Mixes

BETTE HAGMANS GF FLOUR MIX

6 C WHITE RICE FLOUR 12 C WHITE RICE FLOUR
2 C POTATO STARCH FLOUR 4 C POTATO STARCH FLOUR
1 C TAPIOCA FOLUR 2 C TAPIOCA FLOUR

MIX WELL AND STORE IN AIR TIGHT CONTAINER.



Gluten FREE FLOUR ~~
Gluten-free Flour Mix (An All-Purpose Mix):
6 cups Rice flour
2 cups Potato starch
1 cup Tapioca starch

BEVERAGES, MICROWAVE & MISCELLANEOUS
Stir together and store in sealed container.
Featherlight Rice Flour Mix: 3 cups Rice flour
3 cups Tapioca flour 3 cups Cornstarch

3 Tbsp. Potato flour or potato flakes (not potato starch)
Excellent for delicate pastries and baked goods. These were for­mulated by Bette Hagman, The Gluten Free Gourmet. For more flour mixes and endless recipes, I recommend you use one of her many cook­books. I have put these in the cookbook because of the many recipes submitted that use gluten-free flour mixes.
MULTIBLEND GF_FLOUR MIX l
6 cups brown rice flour (or 1f2 and % brown rice and white rice flour)
½ cup potato starch flour
1'1//3 cup tapioca starch flour 1 1/2 cups sweet rice flour
% cup cornstarch (can substitute % cup each of tapioca starch and sweet rice flours)
4 tsp. xanthan or guar gum
This is superior in texture, flavor and moisture content than the GF flour mix. Interchangeable with GF flour mix, or cup for cup for cup all-purpose flour.


Betty Hagmans Dream Pastry Mix

2 C tapioca flour
2 C cornstarch
1 C potato starch flour
4 C sweet rice flour
4 rounded tsp xanthan gum
2 tsp salt
2 tsp sugar

Mix well and place in coffee can or plastic bag. Store in with other flours.

To make dream pastry:

2 ¼ C Dream Pastry Mix
½ C (1 stick) butter
½ C Butter Flavor Crisco
1 egg, cold
1 Tlbs GF Vinegar
¼ C ice water
GF flour for rolling

Place Dream Pastry Mix in medium bowl. Cut in the butter and Crisco in small pieces until you have shortening the size of lima beans (not cornmeal)
Mix, then split dough in half and mash it into the pie plate-makes 2 crusts


FOUR FLOUR BREAD MIX- BETTE HAGMAN

12 CUPS – 6 SINGLE LOAVES

3 C GARFAVA BEAN FLOUR
1 C SORGHUM FLOUR
4 C TAPIOCA FLOUR
4 C CORNSTARCH
3 TLBS XANTHAN GUM
1 TLBS SALT
1 TLBS EGG REPLACER
3 ENVALOPES OR 3 TLBS UNFLOVORED GELATIN
¾ C SUGAR

MIX AND STORE IN AIR TIGHT CONTAINER.

THIS IS GREAT TO USE IN RECIPES THAT CALLS FOR GF FLOUR MIX.

I also buy Pamela's Baking mix at the health food store.

Gluten Free Cooking
Here's a killer brownie recipe for you to share.
GF Chocolate Chip Brownies
2/3 c. Butter
1 1/2 C Sugar
4 Tlbs Water
2 C. Semi Sweet Choc. Chips
4 eggs
2/3 C. Brown Rice Flour
2/3 C. Rice Polish or Rice Bran
4 Tlbs Cornstarch
2 tsp. Baking Powder
1/2 tsp. Salt
3 tsp vanilla
1 C. Chopped Walnuts
Conbine butter, sugar, and water in a saucepan, bring to a boil. (stir until butter melts)Stir in choc. chips, set aside.Beat the eggs, add rice flour, rice bran, cornstarch, baking powder, salt, and vanilla to the eggs.Add the choc. mixture to the egg/flour mixture. Beat well.Add the walnuts,, pour into greased 9"x13" cake pan, Bake 325*, 30 min (brownies may fall, but are very yummy!) I buy the Rice Bran at the health food store in the bin area.
